Ingredients

Sauce (Makes 2 cups)

  • 2 cups Marinara sauce or arrabiata sauce
  • 14 oz Silken tofu
  • Salt (to taste)

Pasta

  • 1 ½ cups Ziti pasta
  • 1 cup Zucchini
  • 2 cups Spinach
  • 3/4 cup Fresh mozzarella cheese
  • ½ cup Parmesan cheese

Instructions

  • Cook ziti according to package directions minus 2 minutes. Drain, then add to a baking dish or tray.

  • Add chopped spinach and zucchini to the baking dish.

  • Make sauce: Add marinara/arrabiata sauce and silken tofu to a blender and blend until smooth. Add salt.

  • Add sauce to the baking dish and mix.

  • Top with fresh mozzarella and sprinkle with parmesan cheese.

  • Bake in an oven for 30 minutes at 200℃
